The ServSafe Food Protection Manager Certification Exam is a nationally accredited food safety credential administered by the National Restaurant Association (through NRA Solutions). It's the most widely recognized food manager certification in the United States, accepted by regulatory agencies in all 50 states, and is frequently required for anyone managing a restaurant, cafeteria, catering operation, or other foodservice establishment.

Who it's for

Restaurant and foodservice managers, kitchen supervisors, and owner-operators who need (or want) a credential proving they understand how to keep food safe from purchasing through service. Many state and local health departments require at least one certified food protection manager on staff per establishment, which makes this exam a practical requirement rather than an optional add-on for most food service careers.

What's covered

  • Foodborne Illness & Contamination — the biological, chemical, physical, and allergenic hazards that make food unsafe, and how contamination happens.
  • The Safe Food Handler — personal hygiene, handwashing, glove use, and policies for handlers who are sick or injured.
  • Purchasing, Receiving & Storage — approved suppliers, receiving criteria, and proper storage to keep food out of the temperature danger zone.
  • Flow of Food: Preparation, Cooking & Service — safe prep practices, minimum internal cooking temperatures, cooling and reheating, and holding/serving food safely.
  • Food Safety Management Systems — HACCP principles, active managerial control, and building a food safety culture.
  • Facilities, Pest Management & Cleaning — facility and equipment design, pest prevention, and cleaning and sanitizing procedures.

What to expect

The exam is 90 multiple-choice questions (80 scored, 10 unscored pilot questions mixed in) with a 2-hour time limit, though most examinees finish in about 90 minutes. A passing score is 75% or better. There's no penalty for guessing, but every question must be answered — blanks are scored as incorrect.

How to prepare

Because the exam draws heavily on specific numbers — cooking temperatures, cooling times, storage temperatures, handwashing steps — memorizing the exact figures pays off far more than general food-safety intuition. Pay particular attention to the temperature danger zone, minimum internal cooking temperatures by food type, and the two-stage cooling requirement, since these show up across multiple content areas, not just the chapter where they're introduced.
